The Refrigerator Special!!

Most people would just call this a quiche which, in actuality, it is. But it is also so much more than just a plain ol' quiche -- it's part of my challenge to not be wasteful. The veggies were on their way to becoming compost and while I didn't want a salad for dinner, I also didn't want to just throw them away. So with the leftover zucchini, mushrooms and spinach I made an excellent dinner! It also made for a quick & delicious breakfast when I woke up late on day 4.

I didn't have the ingredients to make the pie crust, so I ended up buying it at Whole Foods. The aluminum pie dish can be recycled and I can re-use the plastic bag it came in the next time I buy veggies.

Oh, I have never loved quiche so much!
